I’ve first encountered the jerusalem artichoke at Dinner by Heston. Having no idea what it was, I was curious. It certainly sounded posh! I encountered it again at The Ledbury and again at Texture. So what is it? A posh potato. Ok, so it’s slightly firmer and the texture is closer to cassava. It was used as an accompaniment to the main, usually a fish dish.
It was beautifully used at Texture where we had lunch today.
